Doughnut Muffins

I found this recipe on Pinterest.  It was in Euro measurements (grams/ml) so I (roughly) converted it (Oh and I doubled it!).  This was my first go of the recipe.  I will post it here so I don’t lose it.   It’s lovely because you probably already have most of these things in the fridge/pantry.

Doughnut Muffins

1 cup sugar

3 cups flour

2 tsp baking powder

1 cup yogurt

2 tsp vanilla

4 eggs

11 oz butter, melted

preserves

sugar for rolling

Preheat to 350 deg.   Don’t over mix batter.  Fill greased muffin tins less than half full with batter, put a tsp of jam in and put more batter on top (I did’t have any good jam, so I pushed chocolate chips in.  *note* Next time don’t try to push in, just follow directions/layering method).  Bake 15-20 mins until golden brown.  Let cool 5 mins and roll in sugar.

Makes about 18.

Mine turned out slightly dry but all I had on hand was some very thick (almost ricotta like) Greek yogurt.  It might be fine with regular yogurt or the measurements might need slight adjusting.  The possibilities with this are endless.  You could do strawberry jam and roll in powdered sugar or blueberry jam and roll in regular sugar and cinnamon.  You could do some with a lemon curd filling and powdered sugar.  Or what about nutella?  Holy cow!  These were definitely a hit with the family.

Food

Here is a new favorite.  This is from the French Women don’t get fat Cookbook.  It’s great for breakfast/lunch or a filling snack.  It’s called Magical Breakfast Cream.  If you substitute this for your regular breakfast for 3-5 days, you may lose 3-5 lbs.  It weirded me out slightly the first time I ate it, but now I really like it.  Here is my variation.

1/2 cup plain whole milk yogurt (or Greek)

1 tsp flax oil (I use coconut oil instead since I hate the taste of flax)

1 Tbls toasted, sliced almonds (any nuts will do)

1 tsp honey

2 Tbls finely ground oats

Juice and pulp of 2 clementines (or Meyer lemon juice is nice)

This is Chicken Stew with bacon (officially, Creamy Chicken Stew).  We passed around a nasty flu for the last couple of weeks and I made this since the boys in the house don’t appreciate broth soups.  It was very good.  I think I also added peas and pearl onions to the recipe because I had them in the freezer and I almost doubled most of the ingredients (because I usually do with most recipes).   It was very good.  The leftovers would have made lovely Chicken Hand Pies (with just a little more flour to thicken), but we ate it too quickly.

I am trying to get back on track with planning menus (menus that involve new recipes) again.  I find I am great at creative menu planning  for a little while and then I get lazy for a while.  But I have found that I enjoy cooking so much more when I am trying new recipes instead of just doing the same old things that don’t require recipes ( ie. American dinner stand-bys like hamburgers and spaghetti).

I started a Pinterest board for food (finally!).  **Look at my side bar to see my latest pins on pinterest!!!**  That made me feel inspired to plan the meals this week.  I printed out all recipes I will need for the week and stuck them on the fridge next to my menu.

Here is what we are eating this week.  I planned one meat dinner (chicken on salad), one fish (shrimp) and the rest are vegetarian.  I usually try to plan at least one or two nights a week where we eat eggs for dinner.   This week is omlettes and Huevvos Rancheros.  Sunday is a busy day for me (laundry and cleaning for the week ahead) so my goal is to do crock pot meals that also provide plenty of leftovers.  The Ratatouille I can have for lunch next week and the leftover brown rice I will use for Monday’s curry spiced veggie burgers.

Four ingredients.  I should have thought of this sooner :)  Chicken broth, frozen shrimp, frozen mini wontons and fresh baby spinach.  When you can’t be bothered to chop anything…this is perfect!

Did I ever show the slipcover that I finished for the loveseat?  It fits very nicely.  The bottom hem is still unfinished and the inside seams still need some work.  I actually put it on the couch to chalk line it and finish it…but of course haven’t done it.

Before and afters of the old Target play kitchen.  It looks so cute now and is set up right beside my kitchen so in theory Mila can cook when I cook.  We’ll see if it that actually happens.

This is the tent we made using a hula hoop and old sheets for Mila’s birthday.  It has it’s very own chandelier!

Darling made this sweet swing for our living room.  I was so inspired by the mali-mo blog.  It is my new favorite!  It is sooooo beautiful.  I was inspired to do the tent, kitchen and swing after seeing them on her blog!

Homemade pizza with the 5 minute a day bread dough is easy and fabulous!

Apricot jam is so easy!  You don’t need to peel them.

I tested out Posie’s chocolate birthday cake and cloudburst frosting.  I was super impressed with the frosting.  I don’t generally like frosting…but this was perfect!

Lovely food

Ina Gartens no crust chicken pot pie with biscuits.

Berries with honey, greek yogurt and raw cacoa nibs.

Mint Juleps.

E and I canned some cherry juice.  Her Weck jars were so beautiful…I ordered some of my own!

Martha’s strawberry icebox pie.

Mila helped me bake four New Yourk crumb cakes (Martha recipe) for teachers and then we made Liam a double batch of All in the Pan chocolate cake for his birthday…but we forgot the baking soda :(  The crumb cakes turned out nicely and the second double batch of birthday cake was just right.  Six cakes in a day was a lot of baking with a two year old.

The crumb cakes looked rather Christmassy wrapped with doilies…but so pretty.

Here is what we have been up to…

Thursday, March 8th, 2012

Auntie R gave Darling this scooter.  I love it.  It is so cute!  I need to learn how to drive it.

I got these cute play hair rollers at Unique for Mila.  So cute!

I made two giant batches of strawberry applesauce.  The first was 10 lbs of apples and was so good we ate it in 3 days!  The second batch was 15lbs of apples (I had more red delicious than grannies for the second batch) and 2 lbs strawberries, plus a squeeze of lemon and some honey.  The second batch is not as good.  I think too many red delicious made it too watery and so I tried to cook it down a bit.  It turned into an almost apple butter.  Good, but nothing like the first batch.  Oh I made chicken broth with chicken feet.  It completely changed the texture of the broth.  Very gelatinous!

Mila got her summer sandals.  These were too big, I exchanged them for a size smaller.  I love these salt water sandals so much I ordered myself the red adult version :)

These little potted flowers were 3 for $10 at Giant.  They were such a treat!   I bought the pretty lacey Ikea pots for $2.50 each I think.  I bought them with Giant potted flowers in mind.  They are a perfect fit!

I made some pretty cards.

I bought these lovely lamps with Sacha at Unique for $6.99 each.  I am crazy about them.  They need quite a bit of cleaning/fixing, but they are so very pretty…I can’t wait to get them working!

The last month was a bit hard.  Mila and Liam both went through nasty stomach viruses and I have been dealing with awful rashes all over by face and neck.  I believe I finally figured it out…I have developed a coconut allergy (I haven’t been able to wash my hair in a week).  More on that later…I have been so busy…and then today we lost Moonie.  But Sacha is here and that is fun…and G and I are walking and that is fun.  I have been spending too much time looking on ebay for pink and blue porcelain handled items to take my mind off things.  I got a few new pieces to add to my little collection (Mila already broke my vintage cake separator/cutter…I was so disappointed).  But it is finally March and Spring is nearly here.  All will be well…February always seems like a hard month.

Chicken and vegetable quesidillas

Saturday, January 7th, 2012

These were so delicious.

I pan grilled:  chicken breast (with salt, pepper, olive oil and a squeeze of lemon) the day before to make this an easier meal.

I sauteed:  onions, yellow squash, zucchini, and red pepper (sometimes I do mushrooms too)

and assembled in the pan with a smidgen of olive oil:  chicken, veggies, pepper jack cheese, and fresh cilantro in a tortilla (I hate whole wheat tortillas, white spelt is very good, but these are just white flour).

serve it with sour cream and home made salsa:  green onions, grape tomatoes, lime juice, salt, one garlic clove, handful of fresh cilantro.

Lemon poppy seed muffins

Creamy lemon bars

I bought a beautiful box of Meyer lemons at Costco last week.  So I made double batches of lemon muffins and bars.  And I still have some left!

Dutch Baby

Tuesday, December 20th, 2011

This is Angry Chicken’s Dutch Baby recipe.  So easy, but it feels fancy.  I can’t believe I had never made this before.  It is beautiful, isn’t it?  I think it is like a giant popover.
